 L'incontournable distillerie des bords de la Spey élabore depuis 1824 des malts provenant strictement de la variété d'orge Golden Promise, et distillés dans des alambics de petites dimensions à chauffe directe. Ils vieillissent dans des fûts de Xérès Oloroso espagnols faits sur mesure. Le 25 ans présente un nez finement boisé et vanillé, aux fragrances de caramel et de torréfaction. Il développe des notes de rancio caractéristiques des vieux cognacs, qui magnifient une bouche chaleureuse, épicée, relevée de tourbe. D'une longueur infinie, comme il se doit, ce whisky vénérable triomphera en digestif à une table de connaisseurs. |
